Trans Fatty Acids

Hydrogenated vegetable oils are found in a wide variety of foods. Among other things, trans fatty acids can lower good cholesterol, increase bad cholesterol, raise total serum cholesterol, lower birth weight in infants, interfere with the storage and metabolism of normal fatty acids, and increase blood insulin levels in response to glucose load, thereby increasing the risk of diabetes.
